Pork Spare Ribs with Black Bean Sauce

Pork Spare Ribs with Black Bean Sauce is a popular favorite at dim sum restaurants. It's complex flavors makes you think the chef slaved hours over a hot stove. It is quite the opposite. You'll be surprised at how simple the recipe is, simple enough for a weeknight.


  • 1 lb pork spare ribs, cut into 1" segments
  • 1 tablespoon Shaoxing rice wine
  • 1 tablespoon light soy sauce
  • 1 tablespoon sweet soy sauce (kecap manis)
  • 1 teaspoon cornstarch
  • 1/2 teaspoon sesame oil
  • 1 tablespoon dried black beans


  1. Combine all ingredients and allow to marinate overnight or at least 1 hour.
  2. Transfer spare ribs into a dish at least 1 inch high to collect any juices.
  3. Place spare ribs into a steamer and steam for 15 minutes.
  4. Allow to cool for 5 minutes and serve.
